The liquid glucose from PME is a clear, colourless gel with a slightly sweet taste. Glucose can be used to assist making sugarpaste and gum paste. And when added to the PME candy buttons it can even create modelling chocolate. It can also be used to soften icing, added to cake recipes where flour is used to create a softer crumb texture and used prevent royal icing from setting to firm.
